I ended up rebooting my machine several times yesterday. The procedure below now seems to work (on the one book I've opened so
far this morning).
1. Uncheck Remember Missing Font Names. 2. Open files with missing fonts. 3. Save files.
I have no idea what changed between yesterday and today that enabled
this to work.
