I create my own variable management application in a table on a reference page.
A typical columnar layout is:

Variable Name     Current Value    Description     Modification Date

The Current Value column contains an actual instance of the variable, 
including any formatting included in the variable definition. 
Double-clicking on the instance opens the Variable dialog. Single-clicking 
on it lets me copy it to the clipboard and then paste it anywhere in the 
document. Obviously, I can't put the running header/footer or page number 
variables in a reference page table, but all others can be included.

Another advantage of this approach is that I can group the variables (e.g., 
by category) in whatever manner that's most appropriate. When I add a new 
variable definition to the document, I immediately add it to the table 
under the applicable category. Once the table is made, all variable updates 
can be performed from the table, and I don't have to use the Variable 
dialog to find and select the variable I want to insert.
