Thanks to Richard and all who wrote -- the Page Scrolling option was 
exactly what I was trying to remember. (Now I'll have to go hunt down 
whether there's an esc code for that!)

But, at least on my setup, Fit Page to Window doesn't zoom to fit the 
whole spread. (Frame 6, Mac OS 9.2.2)
