Another CMYK question

Dov and others--

I understand that Windows cannot output CMYK, since Dov has said
this so many times. But I'm curious then about the effect of the
Distiller CMYK setting under "Assumed Profiles" (Color tab of Job
Obtions). What is that CMYK seteting (where "Adobe CMYK" is the
only default selection) about?
