I think you mean a chapter number prefix rather than suffix, don't you?
As far as getting a total table count, add to the book file a List of
Paragraphs (LOP) file. In the Book file, set up the LOP to include only the
paragraph tag (e.g., TableCaption) used for table captions. In the LOP
reference page of the LOP file, specify that the paragraph format for
TableCaptionLOP be autonumbered (i.e., n+).

Now, with this setup, when you generate the LOP from the book file, the
last-listed table title in the LOP will give the total number of tables in
the book.
